Yellow Spot Irish Whiskey, originally created and sold by Mitchell & Son Fine Wine and Spirit Merchants, was a distinguished 12-year-old whiskey known for its slight sweetness from maturation in Spanish wine barrels from Malaga. However, it disappeared from shelves in the late 1960s. Inspired by this classic, Yellow Spot has been relaunched as a Single Pot Still whiskey, offering a contemporary twist while honoring its storied past.

 Crafting Tradition

The new Yellow Spot whiskey undergoes a meticulous maturation process. Yellow Spot Irish Whiskey is aged for a minimum of 12 years in a combination of Bourbon, Sherry, and Malaga casks. This unique aging process imparts a superb complexity to the whiskey, blending fresh and slightly sweet notes for a distinctive tasting experience. Notably, Yellow Spot Whiskey is crafted from a blend of 40% malted barley and 60% unmalted barley, and it is not cold-filtered to preserve its full spectrum of flavors.

Traditional Production

Produced at the Midleton Distillery in County Cork, Yellow Spot follows the traditional Irish whiskey method. It is triple-distilled in copper pot stills, which contribute to its rich, complex aromas and creamy mouthfeel. This technique is a hallmark of the Single Pot Still style, which is unique to Ireland.
